1/2 a tin of coconut milk
1/2 teaspoon of salt
4 kaffir lime leaves
2 lemongrass stalks
- Measure the rice by volume (500 ml should be enough for 4 adults if there is plenty of other food), and put in a heavy bottomed saucepan.
- Put the coconut milk in a measuring jug and add water until you have 1.5 times the volume of rice. Add to the saucepan. Add the salt, kaffir lime leaves and lemongrass.
- Bring to a boil, cover with a tight-fitting lid, reduce heat to minimum and simmer for 20 minutes.
